Simple Paleo Pumpkin Cake-in-a-Mug

After nearly a year of deleting grains, dairy, sugars and processed ingredients from my diet, I’ve hit a chef’s equivalent to writer’s block. Instead of concocting primal goodies to satisfy my sweet tooth, I’ve been reaching my hand into the cookie jar. Bad cave girl!

I came up with this recipe a few nights ago and it has totally reinvigorated my creative slump. Best of all, you can cook this thing IN YOUR MICROWAVE. College dormers, rejoice!

For cake:

  • 1 egg, thoroughly whisked
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon pumpkin puree (preferably organic)
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut sugar
  • 2 tablespoon almond flour/meal
  • 1 tablespoon coconut flour
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 cinnamon
  • a pinch of salt

For cake topper:

  • 1 1/2 tablespoon grass-fed butter, room temperature
  • 1 tablespoon coconut sugar
  • 1 tablespoon almond flour/meal
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice

For whipped coconut topping (optional, but oh-so highly recommended):

  • 1 can of full fat coconut milk, stored in fridge overnight
  • 1/2-1 teaspoon organic Grade B maple syrup (to taste)

How to make it:

  1. Add cake ingredients to mug and mix until all ingredients are incorporated.
  2. In a separate bowl, add cake topper ingredients and mix together with a fork (your fingers work for this too!)
  3. Once mixed, add topper on cake mix. Spread the cake topper out as evenly as possible.
  4. Place mug in microwave and cook for three minutes. Allow mug to cool before removing from microwave.
  5. While cake is “baking,” take the cream that has formed on top of your coconut milk and place it in a bowl. Mix in your maple syrup.
  6. Once cake has cooled, add your whipped topping. Take a picture for Instagram and dig in!

This recipe is quick, delicious and perfect for Fall/Winter/whatever season Florida is experiencing right now.

Eat well and enjoy!
